Easy Baked Herb-Crusted Salmon
I find that cooking for one, is quite daunting and unpleasant. I would rather prepare for ten people than cook for one person. Besides the cooking, I dislike the clean up even more. Hahaha. Cleaning up for ten and 1, same banana.
Being in Sydney has really made me appreciate all the blessings Manila has to offer. I am even more grateful and thankful for my extended household family back home.
Here’s what you will need for this recipe:
Before starting this dish, please preheat your oven to 425F.
Here’s the fun part. No rosemary? No problem.
Use whatever fresh or even a combination of dried herbs you have at home. You can even add some curry powder, thai green chili paste, miso paste…. the possibilities are endless.
Open up you spice cabinet and start cooking.

Combine all the ingredients in a bowl and stir until combined. Please DO NOT season this mixture with salt. Season with pepper.

Make sure to pat down salmon fillets. This will ensure that the seasonings do not slip off, of the fish. Season lightly with salt. I like lots of pepper so I was pretty heavy handed on the pepper.
Bake in a pre-heated 425F oven for 15-20 minutes or until golden and cooked through. Cooking times vary and are dependent on the thickness of the Salmon fillet.

Lining your baking dish with parchment paper ensures easy clean up and prevents your fish from sticking to your pan. Golden perfection! It was so moist and deeelish!

EASY BAKED HERB-CRUSTED SALMON
1 300G SALMON FILLET
TO TASTE SALT AND PEPPER
2 CLOVES GARLIC
1 SPRIG ROSEMARY, CHOPPED
1/4 LEMON, JUICE
1 TBSP (HEAPING) REAL MAYONNAISE (none of that miracle stuff please!)
1 TSP (HEAPING) DIJON MUSTARD
