Here’s the last recipe to complete Pria’s Chicken Picatta at Home 😀 I love ,love, love veggies. My son always requests for veggies for every meal. Hope you guys enjoy this very simple veggie dish. 😀
Step 1:
Wash you veggies very well, pat them dry and slice them in half, then into strips. 😀
Step 2:
Slice the eggplant into strips and place them in a bowl filled with water and lemon juice. The acid in the lemon prevents the eggplant from turning brown.
Step 3:
Saute the veggies separately in a pan with olive oil, making sure to season with salt and pepper. Now here’s the part where you can become creative. You can add your fave herbs, spices making sure that it ties together with the dish you are creating 😀 Remember…. Keep the veggies al dente. No one likes a soggy veggie. 😳
Step 4:
Chop some parsley and zest a lemon. Watch out for the pith! ( Stick to the yellow part of the lemon zest being careful not to grate the white part, this can be very bitter) 😯
Step 5:
Combine all the cooked veggies in a bowl, add lemon zest, chopped parsley and check if seasoning needs adjusting. Serve either plated or family style. Enjoy! 😀
