Manong Fred has been our cook in Sarangani for many many years now and he makes delish food for us all the time. His tinolang manok is so much better than what my cook in manila makes, and better than mine as well. I asked him what his secret was and he gladly showed me.
Here’s Manong Fred’s Tinolang Manok (Chicken soup) recipe:
Start off with 1 med white onion, 1 med red onion, 3 Tbsp sliced ginger and spring onions
1 sayote, sliced into wedges
4-5 potatoes cut in half
1 chicken cut into pieces. Please season with salt and pepper.
Heat oil in a pan and add ginger. Saute for about 1 minute.
Add the white and red onions and saute for another 2 minutes.
This was one of his "secret" ingredients that made it taste different from my tinola. Patis! (Fish sauce). So simple. I never thought that patis would make a big difference in the taste of tinola, but it did!
Add the chicken pieces and saute for about 6-8 minutes until all the juices are extracted from the chicken,
Keep sauteeing. This was a step that i never did when making my tinola. I love learning something new everyday.
This is how it's supposed to look like after about 8 minutes of cooking. Please note, he did not add any water at this point.
Transfer chicken and broth in a stock pot and add water. Allow to simmer and season with salt or patis. Add sayote, potatoes and allow to cook until soft but NOT mushy. Add green veggies such as native petchay and spring onions.
