Hot prawn salad is a typical mainstay when we dine in Chinese restos. Tonight, I had friends over and was seriously craving for a hot prawn salad fix. I tried making this dish about a year and a half ago but it didn’t quite make the cut. I decided to make it tonight with a lot of tweaking of course and made my dear friends Lirio and Toby Torres my Guinea Pigs. Praise God they enjoyed it. Phew! This time it came out blog worthy, hahaha. Hope you guys try and make it at home. Enjoy! 😀
Let’s make the Prawn Salad Dressing. Once combined, store in the fridge until ready to use.
Mayo, Condensed Milk, Fruit Cocktail and water. Mix until wel combined. when you are about to fry the prawns, take this mixture out of the fridge and bring to room temperature.
Let’s make the flour mixture for the prawns. Once combined, set aside until ready to use. This is good for fried chicken wings as well. 😉
All purpose flour, cornstarch, salt and pepper
Let’s prepare the prawns.
Combine Water and Baking Soda. Set aside. Peel and devein prawns by slitting the back with a paring knife and remove the intestinal tract and discard. Add the cleaned prawns to the soda water and soak for about 10-15 minutes. This process will refresh your prawns and give it that “springy” texture.
Give your prawns a flour mixture make over 😛
Remove prawns from soda water and Coat the prawns in the cornstarch-flour mixture. keep tossing until each prawn is completely coated. Prepare your pot with oil for deep frying by heating it over medium high heat.
Here we go….
Deep fry the prawns for about 1.5 minutes and set aside on a cooling rack. Finish cooking all the prawns. Increase your heat to high and double fry them for another minute. This ensures that the prawns come out crisp and juicy. NOM!Place hot prawns into prepared salad dressing and stir to combine making sure that every prawn is coated well.ENJOY!! 😀Yuuuuummmy!!!Thanks to one of my favorite couples of all time, Lirio and Toby Torres, for being such amazing friends and for being willing to be my Guinea Pigs for the night. 😉 So happy it turned out good enough to eat. PRIA’S EASY HOT PRAWN SALAD
500 grams Large Prawns
For the Prawn Dressing:
2 Tbsp Condensed Milk
1/4 Cup Mayonnaise ( pls use a “REAL” Mayonnaise type mayo
1/4 cup Fruit cocktail
1 tsp water
For the Prawn Flour Mixture:
1/3 cup Cornstarch
1/3 cu all purpose flour
1/2 tsp salt
1/2 tsp pepper
Soda Water Mixture:
1 1/2 cups water
1 1/2 tsp baking soda

wow i didnt add fruit cocktail but instead i add lemon juice. i also poached the prawns instead of frying them! add them to a hotdog bun and they taste great! thank you! i guess added the evaporated milk really change things 😉

The water is just to keep the dressing nice and light. You can definitely opt to not put it and check if consistency is to your liking 😀
